Super Hooper!

I have a little lull between creations and I did not want to be a boring blogger soooo, I thought I would share this cute little video that my soon to be 14 year old daughter Claudia made the other night! Sweetheart

Good Monday morning! It's a cold and snowy day here is beautiful Colorado. A new challenge is up at BBTB! The challenge is to use the snail cut from the cartridge, Walk in my Garden. 

I chose to keep mine simple with a sweet sentiment. My new favorite embellishment that I used on this card is the chipboard heart die cut. It has a little spring to give it that little extra bounce. Too cute!

A Good Sunday

Dutch Apple Pie

Ingredients:

1 9 inch pie crust
8 medium apples
4 tbsp. lemon juice

Streusel Topping:

1/4 cup brown sugar
1/3 cup white sugar
1/2 cup + 2 tbsp. flour
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp salt
1/2 cup butter
1/2 cup chopped walnuts


Directions:

1. Preheat oven to 375F

2. Core, peel and slice apples. Place apples and lemon juice in a bowl, mix well.

3. Mix brown sugar, white sugar, flour, nutmeg, cinnamon, and salt.

4. Cut in butter with pastry blender, then add chopped walnuts.

5. Add half the mixture to the apples and mix to coat.

6. Place apple mixture into crust, then evenly sprinkle the rest of the struesel crumbs on top.

7. Put foil around crust. Bake at 375 for 40 minutes; remove foil and bake an additional 20 minutes.

Thank you everyone for following me through a week in my life

I have come to the conclusion that my life is a bit boring!

But I wouldn't change it for the world

✸ Woke up at 9:00 to my laptop brought to me and fresh coffee, Thanks Eric!

✸ Bummed around the house until 11:00 

✸ Took a shower

✸ Eric & Kevin met to play golf 

✸ I took Claudia to the club to practice her golf game

✸ Claudia and I had brunch at the club

✸ Off to practice in the freezing cold, brrrr

✸ Stopped by the grocery store on the way home

✸ Kevin, Kazan & the girls are coming over for dinner

✸ Had turkey tacos for dinner

✸ The girls played

✸ The boys watched golf and had a few beers

✸ Kazan and I chatted and had wine

✸ For dessert we had Dutch Apple Pie. Kazan insisted that I try it with sharp cheddar cheese! 

I think it's a english thing. After a lot of begging and pleading, I tried it! It wasn't bad...If vanilla ice cream was in short supply, I might, consider eating my apple pie this way;)

✸ The Clarks headed for home after a lovely evening 

✸ Eric helped me clean the kitchen

Lazy Saturday

Today was a much needed lazy day!

I thought I would share one of my favorite recipes

Pasta with Escarole, White Beans 

and Chicken Sausage

By: Healthy Appetite with Ellie Krieger

Prep Time:10 min, Cook Time:15 min

Level: Easy

Serves: 4 servings (serving size 2 cups)

3/4 pound whole-wheat bowtie (or other shape) pasta 

1 tablespoon olive oil 

1/2 medium onion, chopped, about 1 cup 

3 cloves garlic, minced 

6 ounces lowfat Italian-style chicken sausage, casings removed, crumbled

 (I use hot Italian chicken sausage from Whole Foods)

1 medium head escarole, rinsed, drained and chopped, about 8 cups

 (I use fresh spinach)

1(14-ounce) can low-sodium cannellini beans, drained and rinsed 

1 1/2 cups low-sodium chicken broth 

1/2 teaspoon red pepper flakes 

1 tablespoon chopped fresh sage leaves 

Salt 

Freshly ground black pepper 

1 ounce grated Parmesan

 (I love cheese so I use way more)

Cook the pasta according to the directions on the package.

Heat the oil over a medium heat in a large, deep saute pan or 8-quart stockpot. Saute the onion until soft and translucent, about 5 minutes. Add the garlic and cook an additional 1 minute. Stir in the sausage and cook until heated through and browned, about 4 minutes. Add the escarole and cook until wilted, about 3 to 4 minutes. Add the beans, 1 cup of chicken stock, sage and red pepper flakes and simmer until the mixture is heated through and liquid is slightly reduced. Add the sausage-bean mixture to pasta and toss well, loosening with the additional 1/2 cup chicken stock if necessary. Season with freshly ground pepper and salt, to taste.

Divide among 4 pasta bowls and top with parmesan cheese.

❉Saturday❉

❉ Woke up at 10:00 am this morning! I guess I was sleepy:)

❉ Made my whole wheat flax seed pancakes with blueberries and just a little bit of syrup for brunch

❉  Bummed around the house for a while

❉ We all went for a visit at my moms

❉ Our neighbors just added an adorable yellow lab to their family, Riley! Isn't he soooo cute! I want one!!

❉ After playing with Riley, Eric made his famous crab cakes for dinner!

❉ Eric went out for a beer with a friend at the club

❉ Claudia and I made rice crispy treats, YUM!!

❉ Watched a little PGA golf 

❉ Watched a all new Saturday Night Live! 

❉ In bed late again:)

✽ Woke up at 6:45 and woke up C to get ready for school

✽ Took Claudia to school 

✽ Came home & had my oatmeal & coffee

✽ Went to Costco to pick up some prescriptions & more turkey jerky

✽ Came home and had leftovers for lunch

✽ Picked up Claudia from school

✽ Claudia cleaned her room!! It needed it badly

✽ I packed up some of my scrapbooking stuff, Kazan and I are attending a crop at our local Archivers!!

✽ Cropped, got lots of cards done & had a blast with my bestest friend Kazan!!

✽ In bed by 12:00pm, It's friday night:)

✿ Woke up at 6:45 this morning, got Claudia up and ready for school

✿ Took Claudia to school

✿ Came home had my morning coffee & did a little blog surfing

✿ Took a shower

✿ Kazan & her little one Alex came over for a quick visit

✿ Photographed some of my work

✿ Went to Garbanzo Grill for lunch ( I was starving because I missed breakfast)

✿ Came home and picked up my house

✿ Picked up Claudia from school and went to practice golf

✿ Came home made Yummy Spicy Italian Pasta, this is one of my favorite recipes! I will post the recipe on my blog sometime next week:)

✿ Cleaned the kitchen & talked to Kazan on the phone

✿ Worked on some 2S4Y sketches

✿ Watched Caddy Shack with the family

✿ In bed by 10:00pm:)

I am so lucky to have the privilege to be the card designer at My Creative Scrapbook! MCS offers fabulous monthly kits, a forum, gallery & blog. As a designer at MCS this month it was my duty to offer a challenge on the forum, and of course I chose to provide a "Card Sketch" just like the ones Kazan and I offer at 2 Sketches 4 You! Day #3

A Week in the Life of The Paper Poppy

•Wednesday•

• Woke up at 7:15, today was sleep in day! I did not go to the gym :( I am so sore I can barley move. Hopefully tomorrow I will be better!

• Woke Miss C up for school

• Made whole wheat with flax seed pancakes with blackberries for Wednesday morning family breakfast

• Took Claudia to school

• Had my morning cup of coffee and blog surfed a little

• Talked to Kazan 

• Ate lunch that consisted of turkey jerky and dried mango

• Did a little marketing work on 2S4Y!

• Went to go pick up Claudia from school and take her to our C Club to practice golf. It's about 58〫today. A perfect day to play golf.

• Came home to make dinner, Buffalo Chicken Salad

• Found a nice surprise on my door step 2 boxes of goodies from Cards boy was I spoiled!! Thank you very much Cards & Scrapbook Trends!

• Worked on some Caardvarks Design Team upcoming projects             

• Took a HOT, HOT tubby to soak my poor sore legs      

• Watched a little t.v.

• Eric & Claudia cleaned the kitchen for me since I could barley walk down the stairs:)

 A Week in the Life of The Paper Poppy! 

*Tuesday*

• Woke up at 6:45, I had full intentions on going to the gym this morning! But did not, seriously I am so sore from Monday I can barley walk!!

• 7:00am Got Miss Claudia up to get ready for school

• Took Claudia to school

• Came home had my morning oats & coffee, Yum.

• Did a little blog surfing

• Made a menu & a grocery list, did I mention we have NO food in the house!

• Folded and put away laundry, does this job ever end?

• 10:30 showered 

• Went grocery shopping, one of my least favorite tasks

• Stopped by Archivers and picked up some yummy supplies along with the two latest issues of Cards where I am published in both!! TOOT, TOOT!

• Had yummy pesto pasta salad from Whole Foods for lunch

• 4:00pm Picked up Claudia from school, she had sports after school 

• Talked to Kazan on the phone:)

• Made Margarita pizza for dinner

• Finally sat down to work on my next creation for BBTB

• Took Claudia to Barnes & Noble to get Romeo & Juliet, a must read for English

• Watched a little t.v.  Dirty Jobs with Mike Rowe (love him) 

• 10:00pm Off to bed for me, I have to go to the gym in the morning!

Day #1

*Monday*

• I woke up at 5:00 am and went to my favorite class muscle mix

• Came home at 7:00 am and woke Claudia up for school! 

• After dropping Claudia off at school, I came home and ate my morning oatmeal with honey

• Made my daily post and had "coffee talk" with Kazan

• Started taking down my Christmas decorations, I love how the house looks clean & bare when done:)

• Eric took our sad & dried out Christmas tree to the trash

• Went to go get the much needed car washed and lunch

• Ate my favorite Garbanzo grill for lunch

• Came home and finished up cleaning up my house

• Finally took a shower at 1:00pm Eaaakkk!

• Went to go pick up Claudia from school at 2:00pm

• Went to the post office and mailed off my 2S4Y DT goodies!

• Took a quick trip to one of my favorite stores Target, bought some Valentines goodies

• Came home and went to Panera Bread for dinner with the family, we have no food in the house:)

• Did some much needed laundry 

• Maybe my amaryllis will bloom this week!

• Claudia did homework

• 10:00pm off to bed :) Night!

41st Anniversary

Yesterday my husband and I were going through old photos of his father who was a pilot in the Vietnam War. The 31st of December was the 41st anniversary of when his father, Sam Perisho, lost his life in the war. I came across this photo and thought it was very cool. The pilots look handsome and proud to serve their country.  It's fun to look back at old photos, and the stories they tell.

I hope you all did not party to hard last night! We had a quiet evening. Claudia spent the night at a friends house. Eric and I went to Whole Foods and bought the makings for a big fresh salad, complete with baby greens, juicy pears & creamy blue cheese!  We then shared a piece of yummy chocolate eruption cake! 

2008 was a great year here in the Davis household!
