Super Hooper!

Welcome Mr. President

One Year Blogoversary & A Toot!



Hello all, yes it's been 1 year since I started my blog and I have loved every minute of it! I could have never imagined where my scrapping journey was going to take me. From designing on the most amazing teams to even starting my own challenge blog 2S4Y with my best friend Kazan.

Sweetheart




Good Monday morning! It's a cold and snowy day here is beautiful Colorado. A new challenge is up at BBTB! The challenge is to use the snail cut from the cartridge, Walk in my Garden. 
I chose to keep mine simple with a sweet sentiment. My new favorite embellishment that I used on this card is the chipboard heart die cut. It has a little spring to give it that little extra bounce. Too cute!

A Good Sunday


Dutch Apple Pie















Ingredients:

1 9 inch pie crust
8 medium apples
4 tbsp. lemon juice

Streusel Topping:

1/4 cup brown sugar
1/3 cup white sugar
1/2 cup + 2 tbsp. flour
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp salt
1/2 cup butter
1/2 cup chopped walnuts


Directions:

1. Preheat oven to 375F

2. Core, peel and slice apples. Place apples and lemon juice in a bowl, mix well.

3. Mix brown sugar, white sugar, flour, nutmeg, cinnamon, and salt.

4. Cut in butter with pastry blender, then add chopped walnuts.

5. Add half the mixture to the apples and mix to coat.

6. Place apple mixture into crust, then evenly sprinkle the rest of the struesel crumbs on top.

7. Put foil around crust. Bake at 375 for 40 minutes; remove foil and bake an additional 20 minutes.

Thank you everyone for following me through a week in my life
I have come to the conclusion that my life is a bit boring!
But I wouldn't change it for the world

✸ Woke up at 9:00 to my laptop brought to me and fresh coffee, Thanks Eric!

✸ Bummed around the house until 11:00 

✸ Took a shower

✸ Eric & Kevin met to play golf 

✸ I took Claudia to the club to practice her golf game

✸ Claudia and I had brunch at the club

✸ Off to practice in the freezing cold, brrrr

✸ Stopped by the grocery store on the way home

✸ Kevin, Kazan & the girls are coming over for dinner

✸ Had turkey tacos for dinner

✸ The girls played

✸ The boys watched golf and had a few beers

✸ Kazan and I chatted and had wine

✸ For dessert we had Dutch Apple Pie. Kazan insisted that I try it with sharp cheddar cheese! 
I think it's a english thing. After a lot of begging and pleading, I tried it! It wasn't bad...If vanilla ice cream was in short supply, I might, consider eating my apple pie this way;)

✸ The Clarks headed for home after a lovely evening 

✸ Eric helped me clean the kitchen

✸ Wrote my post for 2S4Y and this one too!

✸ In bed by 10:00pm, Gym in the morning

Lazy Saturday

Today was a much needed lazy day!
I thought I would share one of my favorite recipes

Pasta with Escarole, White Beans 
and Chicken Sausage

By: Healthy Appetite with Ellie Krieger
Prep Time:10 min, Cook Time:15 min
Level: Easy
Serves: 4 servings (serving size 2 cups)


3/4 pound whole-wheat bowtie (or other shape) pasta 
1 tablespoon olive oil 
1/2 medium onion, chopped, about 1 cup 
3 cloves garlic, minced 
6 ounces lowfat Italian-style chicken sausage, casings removed, crumbled
 (I use hot Italian chicken sausage from Whole Foods)
1 medium head escarole, rinsed, drained and chopped, about 8 cups
 (I use fresh spinach)
1(14-ounce) can low-sodium cannellini beans, drained and rinsed 
1 1/2 cups low-sodium chicken broth 
1/2 teaspoon red pepper flakes 
1 tablespoon chopped fresh sage leaves 
Salt 
Freshly ground black pepper 
1 ounce grated Parmesan
 (I love cheese so I use way more)

Cook the pasta according to the directions on the package.
Heat the oil over a medium heat in a large, deep saute pan or 8-quart stockpot. Saute the onion until soft and translucent, about 5 minutes. Add the garlic and cook an additional 1 minute. Stir in the sausage and cook until heated through and browned, about 4 minutes. Add the escarole and cook until wilted, about 3 to 4 minutes. Add the beans, 1 cup of chicken stock, sage and red pepper flakes and simmer until the mixture is heated through and liquid is slightly reduced. Add the sausage-bean mixture to pasta and toss well, loosening with the additional 1/2 cup chicken stock if necessary. Season with freshly ground pepper and salt, to taste.

Divide among 4 pasta bowls and top with parmesan cheese.

❉ Woke up at 10:00 am this morning! I guess I was sleepy:)

❉ Made my whole wheat flax seed pancakes with blueberries and just a little bit of syrup for brunch

❉  Bummed around the house for a while

❉ We all went for a visit at my moms

❉ Our neighbors just added an adorable yellow lab to their family, Riley! Isn't he soooo cute! I want one!!

❉ After playing with Riley, Eric made his famous crab cakes for dinner!

❉ Eric went out for a beer with a friend at the club

❉ Claudia and I made rice crispy treats, YUM!!

❉ Watched a little PGA golf 

❉ Watched a all new Saturday Night Live! 

❉ In bed late again:)

✽ Woke up at 6:45 and woke up C to get ready for school

✽ Took Claudia to school 

✽ Came home & had my oatmeal & coffee

✽ Did a little blog surfing

✽ Talked to Kazan

✽ Went to Costco to pick up some prescriptions & more turkey jerky

✽ Came home and had leftovers for lunch

✽ Picked up Claudia from school

✽ Claudia cleaned her room!! It needed it badly

✽ I packed up some of my scrapbooking stuff, Kazan and I are attending a crop at our local Archivers!!

✽ Cropped, got lots of cards done & had a blast with my bestest friend Kazan!!

✽ In bed by 12:00pm, It's friday night:)
